The good stuff

Eight vegetables, one fermentation

White cabbage, carrots, onion, mooli, courgette, green beans, spring onion and parsley are salted together and fermented with starter cultures — lactic acid bacteria that convert the natural sugars in the vegetables into lactic acid. The lactic acid gives the kraut its tang and preserves the vegetables without adding vinegar.

Live cultures

The kraut isn’t heat-treated after fermentation, so the cultures are still active in the pot. That’s what “live cultures” on the label means.

Salt

Salt pulls liquid out of the vegetables to create the brine they ferment in, and it creates conditions where lactic acid bacteria can thrive.

Fibre

Contains 2.3g of fibre per 100g. Rated high fibre on the pack.
