The cucumbers are laid flat and hit firmly with the flat side of a knife until they split and break apart rather than slice cleanly. The technique comes from Chinese cold dishes — the rough, jagged edges that result grab a dressing far better than a smooth cut surface can. More crevices, more flavour getting into the cucumber rather than sitting on top of it.
After smacking, the cucumbers are quick-pickled in spirit vinegar with soy sauce, garlic, chilli and five spice. The sourness comes from vinegar, not fermentation — these are not fermented and do not contain live cultures.
Vinegar pickling firms the cucumber rather than softening it. The combination of smacking and quick-pickling gives a snappy, bold bite that sliced pickled cucumber doesn’t.
