Classic kimchi (SPICY OR MILD)

Made from hand-cut Chinese leaf and a blend of raw vegetables, sea salt and Korean chilli flakes, we ferment this kimchi for around 3 weeks to create something that is complex, tangy and savoury. Besides just eating it straight out of the jar, try our kimchi as a topping for rice or noodles, in burgers, hot dogs and sandwiches, or as a surprisingly great accompaniment to blue cheese.  

Kimchi is also a fantastic ingredient to cook with; try marinating a slab of fatty pork in a whole jar of kimchi overnight, and then slowly braise the whole lot for hours to make a wonderful, simple one-pot meal.  As cooking kills the beneficial bacteria, we recommend serving some raw kimchi on the side for maximum benefit.
