We love silken tofu for it’s ease of use. Often served in Asian cuisine with a combo of tasty toppings and a delicious dressing. We take a traditional approach to our dressing ingredients and add a decent amount of our Eaten Alive Raw Kimchi hot sauce to boost the funky flavour dimension.
The beauty of silken tofu is it’s unusually silky softness. So when it comes to toppings its all about adding the contrasting mouthfeel. We love to throw Shiitake Bacon and crispy shallots at our tofu along with some additional fresh aromatics.
This Shiitake Bacon recipe of ours carries a smoky toasty flavour and lends a beautifully contrasting chewy bite. Similarly the addition of crispy shallots gives a lovely crunch. Crispy shallots can be bought in some supermarkets, alternatively there are plenty of recipes to be found online.
The fresh chives, spring onion and chilli add the finishing touch in both aromatics and visual appeal.
Ingredients:

1 x Block of Silken tofu
Dressing Ingredients:

2 Tbsp Light soy sauce

1 Tbsp Mirin
-
2 tsp Rice wine vinegar

2 tsp Toasted sesame oil

3 cloves of garlic, finely minced
Toppings:
-
Shiitake Bacon (follow link for recipe)

Crispy shallots (shop bought or home fried)

Chives, finely chopped
-
Spring onions, chopped

Fresh chilli, finely chopped
Method:

Carefully remove the Silken Tofu from it’s packaging and allow it to drain. You can often turn it out onto some kitchen towel to absorb any excess liquid.

Combine dressing ingredients together in a jug.

Plate the Tofu in a serving dish of a suitable depth.

Pour the dressing over and/or around the silken tofu.

Finish by topping with all of your topping ingredients.
Serving suggestions:
Serve with rice and lightly steamed greens on the side.
