Ingredients :

2 x 400g cans of Banana Blossom

2 Tbsp neutral tasting oil of your choice
Dressing Ingredients:

Yogurt of choice. We like to use the Coconut Collabrative Natural Coconut Yogurt

Extra Virgin Olive Oil
Method:

Open the cans of Banana Blossom and drain.

Combine the Fermented Jerk seasoning and the oil.

Move your Banana Blossom to a large bowl and cover with the Fermented Jerk seasoning/oil mixture, carefully working the paste all over the Banana Blossom and in between it’s petals using a pastry brush or your fingers.

Cover and leave to marinate ideally overnight in the fridge or at least for a few hours.

Cook in a covered dish in an oven at 200℃ for about 20 mins.

After 20 mins remove the lid and continue to cook for another 10 minutes turning halfway so it begins to catch the heat, caramelise and crisp to your taste.

Meanwhile make your Sriracha Yogurt Dressing by mixing each dressing ingredient together in equal parts, making as much as required.
Serving suggestions:
Serve with the Sriracha Yogurt Dressing, a crisp fresh salad, fried ripe plantains, the ubiquitous rice and peas.
